Spiced Pork Roast
This Moroccan spiced pork recipe makes an all-star meal. Works well with any cut of pork roast. My favourite is the rib roast as it contains enough fat to ensure juicy results.
Ingredients:
1 pork rib roast, 8 ribs or loin pork roast bone-in
1 TBSP olive oil
2 TBSP Sultan's Delight
1 onion, cut into 4 (optional)
1 large carrot, cut into 1" pcs (optional)
3 cloves of garlic, unpeeled (optional)
Salt & pepper to taste
Directions:
Preheat the oven at 450°.
Pat the roast with olive oil then rub the Sultan's Delight over the pork.
Place the pork in a roasting pan. Add the onion, carrot and garlic.
Add 1/4 cup water.
Place roasting pan in oven & roast for 15 minutes. After 15 minutes, lower the oven to 325° and roast for another 1 to 1 1/2 hours depending on desired doneness.
Once pork's internal temperature has reached 160°, remove from oven and let rest for 10 minutes before carving.
Note: Leftovers are great in the Pork Fried Rice recipe.
