Spiced Pork Fried Rice

 

This is a perfect recipe for leftover Spiced Pork Roast. The Sultans' Delight rub on the outside of the roast bring a nice Chinese 5 spice flavour to the fried rice.

 

When cutting the pork roast, keep some of the fat as it will render during the cooking process and make the meat juicy. It works well with frozen or leftover vegetables.

 

Ingredients:
 

2 TBSP oil (vegetable, soya, canola)

1 TBSP sesame oil

1 onion, chopped

1/4 cup corn kernels (optional)

1/4 cup peas

2 eggs, beaten

1 1/2 cup Spiced Pork Roast leftovers, cut into 1/4" cubes

2 - 2 1/2 cups rice, cooked

3 TBSP soy sauce

1 TBSP Ponzu sauce (optional)

Black pepper

2 green onions, chopped

 

 

Directions:

Preheat a skillet on medium heat. Add oil & sesame oil then onion. Cook until translucent (about 2 minutes). Add peas and corn. Cook for a few minutes.

 

Move the vegetables to a side of the pan. Pour the eggs on the other side. Using a spatula scramble the eggs.

 

Once the eggs are cooked, add the pork pieces and mix with eggs and vegetables. Cook for 2 minutes. Add rice, soy sauce, ponzu sauce and black pepper.

 

Fry for 5 minutes mixing regularly.

 

Serve topped with green onion.
