Shrimp Canape

 

We are always looking for an easy shrimp recipe that will impress our guest. Try this shrimp appetizer recipe for your upcoming cocktails. 

Our recipe calls for Pita cups that you can make easily at home. However, you can substitute the pita with white or whole wheat bread or flour tortilla cut into circles using a cookie cutter.

 

Ingredients:

1 pita (medium) or 2 slices white bread or flour tortilla
4 large shrimp, cooked, deveined, cut in half
3 TBSP cream cheese
1 TBSP mayonnaise
1 green onion, sliced finely
2 TBSP cilantro, chopped
1 1/2 tsp. Tunisian Harissa
olive oil

 

Directions:

Preheat oven at 375 degrees.

Separate the two layers of the pita. Using a cookie cutter or egg frying ring, cut out 8 circles. Brush the pita circles with olive oil. Place in microwave for 10 seconds to soften. Press circles into a miniature muffin tin. You will have to press sides really hard to ensure pita retain their shape.

Bake pitas for 3-5 minutes ensuring they do not burn. Remove from oven and cool.

Mix cream cheese with mayonnaise and Tunisian Harissa. Put mixture into pastry bag. if you don't have a pastry bag, place mixture in ziploc type bag. Close the bag and cut a hole on one of the bottom corner. Use same as pastry bag to pipe cheese mixture onto pita cups.

Assembly:

In each pita cup, place green onion in pita cup, pipe mixture with pastry/ziploc bag, top with 1/2 shrimp and garnish with cilantro.

Makes 8 appetizers.
