Moroccan Couscous
Ingredients:

small Onion (chopped)
Olive Oil
Chicken or Vegetable stock
Sultans’ Delight
Lemon zest and juice
Pinches salt
dried Apricots
hand full Sultana raisins
Couscous
Green Onion (chopped)
Directions:
Brown the chopped onion in olive oil. Mix in Sultans' Delight. Add your stock, lemon zest & juice, raisins, apricots and salt. Simmer for a few minutes then add couscous, mix, cover and remove from heat. Let stand 15 minutes.
Serve couscous topped with green onion.
Note: Stock or water can also be replaced with orange juice or pineapple juice.
