Carrot Soup


This is probably the easiest soup you will ever make. The amzing flavour is in it's simplificity.




2 lbs carrots, peeled and cut into 1" pieces

1-2 tsp Sultans' Delight

Salt and pepper to taste




Bring large pot of water to a boil. Add carrot pieces and cook until tender. Do not overcook. You should be able to pierce carrot easily with a fork but they should not be mushy. Scoop carrot out of water with slotted spoon but keep water for soup.


Add 1/4 of the carrots to a blender or food processor with 1/4 cup of carrot water. Process to a puree. Add another 1/4 of the cooked carrots and puree. Add more carrot water but make sure the puree does not become too runny. Puree all carrots until smooth and hearty consistency.


Discard carrot water and return puree to the pot. Reheat on low and add Sultans' Delight, salt and pepper.


Serve with fresh basil or a dollop of sour cream or yogurt.
