Tuscan Roasted Potatoes

Ingredients:

mini potatoes (in half or quartered depending on size)

Olive Oil

Tuscan Sunset Blend

Sea Salt

Freshly ground black pepper

Directions:

 

Preheat oven at 400°.

 

Mix the first three ingredients in a bowl making sure to coat the potatoes on all sides. Place potatoes on a cookie sheet covered with parchment paper.

 

Top with sea salt and pepper.

 

Bake the potatoes for 30-40 minutes making sure to turn them at half time.

 

Note: To minimize shrinkage, potatoes should be brined for 1 hour before coating with olive oil and spices. To brine, place potatoes in a bowl, Top with cold water, add 1 TBPS sea salt and 1 TBSP sugar. Let stand for an hour. After an hour, drain potatoes & rinse.
