Three Bean Salad

 

A quick and flavourful way to get your protein and a perfect side dish to BBQ’d meats and sandwiches. Great for picnics!

 

Ingredients:

1 can of three bean mix (540 ml)
½ English cucumber, diced
1 tomato, diced
3 green onions, diced
2 tbsp olive oil
1 tbsp lemon juice (can be replaced with lime)
1 ½ tsp Turkish Enchantment spice blend
Freshly ground black pepper and salt to taste
 

Directions:

Rinse beans thoroughly, drain and mix in a bowl with remaining ingredients. Let stand at room temperature for 15 minutes before serving.

Serves 3.
