Stuffed Chicken Breast
Chicken breasts (skinless, boneless)
Artichoke hearts (sliced)
Feta Cheese (crumbled)
Kale leaves (spine removed)
Sundried Tomatoes (sliced)
Cooking healthy is the way to go now. This Mediterranean stuffed chicken breast recipe is healthy, easy to prepare and very versatile. Try it with asparagus, artichoke hearts, kale or anything you like. This recipe can also be prepared with chicken thighs.
Preheat oven at 425°.
Blanch kale in boiling water for 30 seconds. Remove, drain and chop.
Pound chicken breast lightly to flatten.
Mix feta cheese with 2 tsp. Za’atar. Place 2 tbsp cheese mixture in center of each chicken breast. Top with kale and artichoke slices. Roll and place fold side down on a baking sheet. Season with additional Za’atar.
Bake for 20-25 minutes or until chicken is fully cooked.
