Root Vegetable Tagine

 

Kid Approved! Made with root vegetables of your choice and chick peas, this tagine is inexpensive, easy to make and provides sufficient protein for a main meal.

This vegetable stew can be prepared in a tagine pot on the stove, in the oven with a dutch oven or in a crock pot.

Flavours are intensified if this recipe is made ahead of time and reheated before serving.

Ingredients:

1 yam, cubed
1 sweet potato, cubed
3-4 large carrots, cubed
1 parsnip, cubed
1 turnip, cubed
1 onion, diced
3-4 garlic cloves, chopped
1 can tomatoes, diced or 3-4 fresh tomatoes
2 TBSP olive oil
2 TBSP balsamic vinegar
2 TBSP Sultans' Delight spice blend
1 cup vegetable broth (can be replaced with chicken or beef)
1 can of chick peas 540 ml, drained and rinsed
Salt, to taste

 

Directions:

Place all of the ingredients with the exception of the chick peas in the crock pot, tagine pot or dutch oven. Simmer for 2½ hrs then add the chick peas. Adjust seasoning to taste and let simmer for another 1½ hours.

Serve topped with chopped cilantro, or parsley and a slice of pita bread or French bread to soak up the juices.

Serves 4 as a main meal or 6 as a side dish.
