
Louisiana Dirty Rice
This Southern dish is easy to prepare, versatile and very yummy! Traditionally prepared with chicken livers, our recipe is made with sausage meat. Change it up by replacing the sausage meat with ground beef or pork and add a can of black beans. This dish can be served as a side or a main and makes a great filler for stuffed vegetables.
Ingredients:
1 cup of cooked rice
4 sausages
1 small onion, diced
1 clove garlic, minced
1 green pepper, diced
1 celery stalk, diced
1 1/2 TBSP Tunisian Harissa powder
1 TBSP Worcestershire sauce
Salt and pepper, to taste
Water
Yogurt (optional)
Cilantro, chopped (optional)
Directions:
Open each sausage casing and add meat to a skillet. Cook on medium-low heat making sure to break up the meat with a spoon. When the meat is almost fully cooked, add the onion, garlic, green pepper, celery and a pinch of salt. Cook for 2-3 minutes until the onion is translucent, the celery is soft and the meat is fully cooked.
Add the pre-cooked rice, Tunisian Harissa powder, about 2 TBSP water, freshly ground pepper and Worcestershire sauce. Mix everything together and cook another 2-3 minutes. When ready your rice dish should have a creamy texture.
If this dish a too hot for some, top with a dollop of yogurt and chopped cilantro.
Serves 2 as a main.
