This is an easy shrimp pasta recipe that can be modified to fit any tastes by adding basically anything you like into the bowl. The shrimp can be replaced with tuna, salmon or scallops seared in butter for 1 minute. Try it with scallops.
12-15 large shrimp, shelled
1 /2 package of pasta, any type
2 tomatoes, diced
1-2 Tbsp olive oil (or to taste)
½ tsp crushed hot peppers (optional)
1-2 clove garlic, minced (heart removed)
20 olives, any kind
3 green onions, sliced
Zest and juice of 1 lemon
2 tsp. Italian Bliss spice blend
Salt & freshly ground pepper
Parmesan de Reggiano, to taste
Cook pasta. While pasta is cooking, mix all of the remaining ingredients except the parmesan into a big bowl. When pasta is almost ready, add shrimp to boiling water. When shrimp turn pink, drain and add pasta & shrimp to bowl. Mix & serve with freshly grated parmesan.
