Banana Rumaki

 

Banana Rumaki is a tasty appetizer made with bacon, bananas, and brown sugar and spices. The combination of bacon and bananas may sound strange but the flavor is superb. The salt from the bacon balances well with the sweetness of the bananas.

 

Ingredients:

2 bananas (green)
12 strips of bacon, partially cooked
3 TBSP brown sugar
2 tsp. Sultans' Delight
12 toothpicks

Directions:

Preheat oven at 400 degrees.

Mix the sugar and Sultans' Delight in a bowl.

 

Cut the bananas in 1 inch pieces. Take a piece of banana and roll into the sugar mixture making sure to cover all sides.  Place the piece of banana on a bacon strip and roll tightly. Secure with a toothpick. Roll the piece into the sugar mixture again. Place on cookies sheet covered with parchment paper. Repeat for all the banana pieces.

Bake for 5 to 10 minutes making sure the bananas do not burn but the bacon get crunchy.

Remove form oven and let cool for 10 minutes.

Makes 12 appetizers.

Tip: Use pre-cooked bacon as it is already partially cooked and more pliable. Avoid using uncooked bacon as the time it will take to cook the bacon will render the banana to mush.
